brixº owner Hunter Smith has over 20 years of service and management experience in a variety of Virginia dining establishments. He helped open and establish several of Richmond’s most acclaimed restaurants, including Azzurro Restaurant (’94), Patina Grille (’98) and Can Can Brasserie (’05), as well as Zagara in Fredricksburg (’97). Hunter served as Grill Operations Manager for The Country Club of Virginia and more recently as Service Manager for Lexington Golf and Country Club before creating the concept for brix°. Over the years Hunter has developed a reputation for service and product knowledge. Self-taught in the industry, he believes that there is no substitute for experience and has plenty of it.
Nathan Fountain, FMP
After working with Hunter at Azzurro restaurant in Richmond, VA, Chef Fountain attended The Culinary Institute of America. Since graduating from CIA in 1998, he has worked in a number of fine dining establishments in the Virginia area, the US and internationally in a variety of capacities. Among other experiences, Chef Fountain was the original Sous Chef of the lauded Palladio Restaurant at Barboursville Vineyards in Charlottesville, VA and worked as the Food and Beverage Director of Village Cay Hotel and Marina in Tortola, BVI. Most recently Chef Fountain left a Chef Instructor position at Culinary Institute of Virginia to join owner Hunter Smith in the opening and operating of brix°.
